I'd like to suggest to add some explanation where is necessary in order to get the meanig properly

Well, here are mine:
As cool as a cucumber: when you describe sb to be "as cool as a cucumber" that means that s/he is very relaxed, calm, and unemotional.

As quiet as a mouse: when you describe sb to be "As quiet as a mouse" that means that s/he is very quiet or silent.
By the way, in English this idiom has a positive meaning while in Arabic it may sound negative

I think it is one of two , either it is for high purity , or it is for feeling sick .
the other possibility is just to highlight the quality and quantity of the green color of the thing wich is meant while talking
